We're looking for an experienced Restaurant Manager to join the team of our exciting new Indoor Trampoline & Adventure Park at Bagatelle Mall.
Working closely with the Operations Manager and General Manager, you'll take full ownership of the park's food & beverage outlet — driving sales and profitability, leading and developing your team, delivering a guest experience that keeps families and party guests coming back, and upholding the highest standards of food service, hygiene, health, safety and sustainability in a high-footfall, fast-moving environment.
Business Performance & Commercial Delivery
• Operate the outlet efficiently and profitably while protecting the reputation and ethos of the Flip Out brand.
• Own the outlet's commercial KPIs: sales, covers, cost of goods, labour and overall budget — reviewing performance and taking corrective action to meet or exceed targets.
• Support the Operations Manager and accounts team on monthly P&L reviews, pricing strategy and accurate cost calculations.
• Drive upselling, party and group packages, local store marketing, promotional events and discount schemes to maximise revenue.
• Prepare weekly and monthly reports on sales, staff and food control.
Operational Standards & Compliance
• Oversee all opening, closing and housekeeping procedures, cash-up, petty cash and cashier stations.
• Maintain high standards of food service, hygiene and grooming in line with brand standards, and lead the service hygiene team.
• Make health & safety a daily priority — embedded in every briefing, coaching conversation and operational decision.
• Manage stock levels and ordering, minimise wastage and control energy consumption (electricity, gas, water).
• Work with the quality department on restaurant audits and liaise with the mall/landlord on shared obligations.
• Flag to the Sustainable Development Department anything that may impact the environment or community.
People, Guest Experience & Innovation
• Recruit, coach, develop and mentor your team; manage performance, scheduling and daily briefings to set clear goals and deploy the floor to business levels.
• Create a work environment built on teamwork, recognition, feedback and mutual respect.
• Be visible on the floor when it matters most — engaging with guests, handling complaints and requests smoothly, and contributing to a safe, fun-filled adventure park atmosphere.
• Gather market and guest feedback and turn it into action.
• Work with the Chef on recipes and menu planning, and bring new ideas for service, products and party offerings.
• Champion the Eco Standard / Sustainable Responsibility commitments across the outlet.
• Degree in Hospitality Management, Business Administration or a related field.
• At least 3 years' proven experience at management or supervisory level in a fast-paced restaurant, leisure or F&B environment.
• Strong financial acumen and strategic planning ability — you read the numbers and act on them.
• Outstanding people leadership: you lead from the front and genuinely care about your team's development.
• A guest-first mentality: you understand that every interaction matters.
• Excellent communication skills, with a good level of spoken French and English (bilingual environment).
• Solid knowledge of health, safety, hygiene and environmental standards.
• Analytical, solutions-focused and comfortable with operational management platforms.
